Our Kona coffee is hand picked, hand
processed, and sun dried. Coffee that is drying in the sun must be raked every
half hour (more or less) as it dries. This turns the wet beans so they dry
evenly. Sun drying may take 5 to 7 days. The rolling roof in the background is
moved over the coffee at night and in the afternoon to protect the drying beans
from rain. The movable roof technique was developed by the early Japanese
coffee farmers on the Kona coast. In Kona today these roofs are called
ochidona, or "moving roof" in Japanese. |
